L. Mawby Traditional Method Leelanau Peninsula Sparkling Wines

 

Cremant Classic – BRUT
Vignoles Exclusiv
‘Aromatic, yeasty, nutty notes… medium bodied… with piercing fruit flavors and well balanced acidity.’
Entirely estate grown in our Cremant vineyard, 100% from Vignoles grapes that are hand picked and carefully whole-cluster pressed. The juice is fermented in stainless steel, then blended with reserve wines aged in oak and fermented a second time in this bottle and aged en tirage before degorgement.

Talismøn – BRUT
Unique Aged Blend
‘Strikingly aromantic, aromas of toast, moderately full bodied and deeply flavored.’
A blend of vignoles, pinot noir, pinot gris, and chardonnay grapes that are hand picked and carefully whole – cluster pressed. The juice is fermented in stainless steel and blended with reserve wines in a solera kept in oak, then fermented a second time in this bottle and aged en tirage before degorgement.

Blanc de Blancs – BRUT

Chardonnay Crisp

Entirely chardonnay grapes that are hand picked and carefully whole-cluster pressed. The juice is fermented in stainless steel tanks, then blended with reserve wines and fermented a second time in this bottle and aged en tirage before degorgement.

Conservancy – EXTRA SEC
Protecting Leelanau
‘Candied fruit aromas… moderately full-bodied… classy, lingering fruit finish.’
This cuvee benefits the Leelanau Conservancy. For each bottle sold, we contribute $2 to the Farmland Preservation Fund of the Leelanau Conservancy, a fund dedicated to the preservation of farmland in perpetuity. This allows landowners to realize some of the value of their property, while preserving the land for agricultural use.

Classic Cuvee
‘Aromas and flavors of ripe pinot, apply chardonnay flavors linger on the palate…clean, crisp finish.’
A classic pinot noir dominated non-vintage blend sparkling wine. This mulit-vintage blend is produced from pinot noir and chardonnay grapes from the Leelanau Peninsula that are hand picked and carefully whole – cluster pressed. The juice is fermented in stainless steel, then fermented a second time in this bottle and aged en tirage before degorgement. Then finished with a Brut dosage of 1% residual sugar.

Grace – BRUT ROSE
Pinot Noir Rose
‘Delicate pink, pinot noir aromas and flavors… moderately full-bodied… elegant wine.’
Pinot noir and chardonnay grapes that are hand picked and carefully whole-cluster pressed. The juice is fermented in stainless steel tanks, then blended with reserve wines and fermented a second time in this bottle and aged en tirage before degorgement. At degorgement a small quantity of regent red wine is added.

SANDPIPER – SemiDry White
Fresh Folky Songbird
‘Gentle fruit aromas, just off-dry, sweet tart flavors, clean finish.’
A blend of select wine grapes that are hand picked and carefully whole-cluster pressed. The juice is fermented in stainless steel tanks, then fermented a second time in a closed tank [the cuve close method]. The wine is then filtered, dosaged, and bottled. Available only on line and at the winery.

ROSSO – SemiDry Red
Balanced Berry Fusion
Rosso has flavors of ripe dark berries with the light mouthfeel of a sparkling wine.
This sparkling wine is produced from Pinot Noir, Regent, Syrah, Chardonnay and Marechal Foch wine grapes. The Pinot Noir and Chardonnay grapes are hand picked, whole cluster pressed and fermented in stainless steel. The red grape varieties were hand picked, crushed and fermented on the skins to extract color and flavor. After fermentation, the wines were blended before being fermented in the cuve close method producing delicate natural effervescence.

GREEN – Dry White
Refreshingly Tropical Electronica
‘Tropical fruit aromas, light bodied, crisp refreshing finish’
A blend of select Cayuga and Riesling wine grapes that are carefully hand picked and pressed. The juice is fermented in stainless steel tanks, then fermented a second time in a closed tank [the cuve close method]. The wine is then filtered, and bottled with a dosage of 1.5% residual sugar.

US – Dry White
Round World Stonefruit
‘Peach and light red fruit aromas, medium bodied.’
A blend of Pinot Noir and Chardonnay grapes that are hand picked and carefully whole-cluster pressed. The juice is fermented in stainless steel tanks, then blended with reserve wines and fermented a second time in a closed tank [the cuve close method]. The wine is then filtered, dosaged, and bottled.

SEX – Dry Rose
Fleshy Top-40 Rosé
‘Pink hue, red fruit aromas, soft syle, delicious.’
A provocative blend of Pinot Noir, Chardonnay and Muscat grapes that are hand picked and carefully whole-cluster pressed. The juice is fermented in stainless steel tanks, then blended with reserve wines and fermented a second time in a closed tank [the cuve close method]. The wine is then filtered, dosaged, and bottled.

DETROIT – Sweet White
Floral Hip-Hop Diva
‘Full floral aromas, rich sweet fruit flavors, sweet but not cloying finish.’
A blend of Riesling, Muscat and Traminette grapes that are carefully picked and pressed. The juice is fermented in stainless steel tanks, then fermented a second time in a closed tank [the cuve close method]. The wine is then filtered, dosaged, and bottled.

FREESTYLE
Singular Rhythmic Improv
Freestyle is a proprietary “Winemakers Selection” blend. Each cuvee is carefully crafted in it’s own unique style, never to be repeated. The wine grapes used for this wine were hand picked and whole cluster pressed, then fermented a second time in stainless steel pressure tanks [the Cuve Close method] capturing the natural effervescence.

 

MAWBY Sparkling Ciders

 

BRIGHT – SemiDry
Drinkable, refreshing and a bit more delicate than a traditional hard cider, BRIGHT is tank fermented and made with 100% Leelanau County apples.

CENTURY – SemiDry
This bottle fermented cider is primarily made up of Northern Spy and Ida Red apples. Local Centennial hops are used in the dosage.

WILD – SemiDry
This bottle fermented cider is primarily made up of Northern Spy and Ida Red apples. It spent about was about seven months tirage aging.
Wild is finished with a cherry brandy and montmorency cherry concentrate dosage.  The resulting cider is off-dry, pale pink, with a beautiful balance of apple-cherry-sweet-and tart.

PRIME – SemiDry
This cider has stories to tell. Aged 15 months en triage, This beauty is made from 100% Leelanau County apples.
